And I guess i would just put the delay plugin into the aux channel and make it super wet as you said. I was thinking, maybe there would be a way to have a delay plugin in the original track and then only somehow send the echo into the aux channel strip. If that makes sense. When I started using Logic I was irritated by the fact that Logic automatically creates a stereo plugin on a stereo fader. I came from a DAW where the mixer was completely modular. I could play a dry mono guitar on the right side of a stereo fader and add a mono plugin on the left side of that strip. In Logic I mostly use busses to realise that. In fact my old DAW wasn't perfect either. Sometimes I made an unwanted routing because my plugins didn't match and I lost precious time to search the error.
