Click the edit button at the top right of the EXS24 to edit the instrument. You can adjust the pitch of each zone, and set envelope and filter offsets for each group.

The EXS24 is not explained in my book, but there is a lesson about it in David Dvorin's book (Logic Pro 9 Advanced Music Production).

Not sure which part is giving you trouble: can you not see the "edit" button at the top right of the EXS24? Or do you have trouble finding the pitch column in the instrument editor? If the latter, make sure "Zone:pitch" is selected in the "View" menu?

If you tell me exactly where you're having trouble I can help further...

I'm afraid I'm not sure what you mean.... if you're asking about how to loop the sample, then once it's a zone, control-click it and choose open in Sample Editor, then select the portion of waveform you want to loop and choose Edit > Selection -> Sample Loop.
