I said I used SmartQuantize set to OFF. I assumed that this meant OFF, well that's wrong. Indeed, that's wrong, even if I agree with you that this behavior isn't exactly super user-intuitive. However you did not "use SmartQuantize set to OFF" as you believed. Instead, here's what happened...

Automation (touch, latch etc) is for recording the movements of knobs or sliders on the Logic interface. You can move them directly with the mouse, or with controller assignments. That's normal behavior: you cannot cut a MIDI take. Instead, cut the folder, on the main track.

I recommend against using a symbolic link as this may trigger issues down the line with Apple Sound Library content updates. Move the files back to their original location and use Logic Pro X > Sound Library > Relocate Sound Library. Symbolic links work perfectly fine for Library relocation. What d...

You can try what logicben suggested and it should work, however whenever possible I favor fixing the issue at the source: your keyboard. Try to figure out if there's a way to transpose the keyboard to change the pitches of the MIDI Notes it sends one octave down?
