The recorded MIDI data is generally stamped with the channel it was recorded on. However, on playback, the MIDI data is rechannelised according to the track settings - so an event with any MIDI channel will end up as "2" on playback if the object on that track is set to MIDI channel 2.

 

If you set that track's MIDI channel to "Any", then the MIDI data will not be rechannelised on playback, and the events will playback with their originally recorded channels, whatever they were.
