I'm not as familiar with Maisntage than with Logic, but what you highlight in your first picture is the channelstrip (not its inspector). You got to find the channelstrip's inspector (not the channelstrip itself)... Besides, I think that you have to take into account that 3rd party plugins (such as Kontakt) have their own MIDI channel setting as well...

I'm trying to Map different Tracks to different MIDI Channel.

 

It looks more to me as if you are trying to map them to different input devices.

If you still want to use different MIDI channels you'll probably have to use the Channel Filter setting with the Scripter MIDI-FX plugin.
