Has Freeze changed?

1.   Has the procedure for freezing changed?  I freeze, and then can make any changes I want.  How do I even know that it's frozen?

2.  And is there any indication in the mixer that a track is frozen?

No.

There are freeze buttons that indicate the freeze status in the main tracks area. They have different colours for source-only freeze (eg, freezes the software instrument, but leaves the other plugins etc on the channel live), or regular freeze (freezes all plugins on the channel).

Not so much, the track freeze buttons are in the tracks area, not the mixer. You will see the plugin slots dim though if the track is frozen, and you'll see the mouse cursor turn into a little cute snowflake when you hover over a frozen plugin slot.
