Is it possible to "lock" a track in Logic? [SOLVED

You could freeze the tracks. In the arrange window select View > Configure Track Headers and then enable Freeze. You will then see the Freeze button appear on the tracks.

From there you could also right click on each individual region and choose Lock SMPTE Position. They can still be 'deleted' from the arrange window, but they still reside in your Bin, symbiotically on your hard drive.

Or do what David said.. he knows everything.

The protect function can come in handy when you're at the end stage of project and you're deleting entire tracks. It has saved me a few times when I've had monster projects with over 100 tracks. Sometimes you lose track of things so it's good to protect the tracks that you absolutely can't redo (like vocals).
