Locking tempo to live performance, or other way around?

How would you best approach this in Logic? If I record someone singing and playing acoustic guitar (who feels uncomfortable playing/singing to a click) and then want to do an arrangement around the performance, I could just treat Logic as a multitrack tape recorder, and play everything, drums, bass, guitars, strings, keys, etc etc in realtime. But it'd be great to be able use drums loops, ez drummer with groove monkee drum loops etc.

Is there a good way to do this? Do I create a tempo map from the performance, and have everything lock exactly to the performance? Do I find a temp that is very closet to the average tempo of the performance, and flex time the entire performance to that tempo? Either way seems like it would take a long time to do well, if it could be done well. There's no way to do a 'global flex' to match the entire performance to a specific tempo is there?

Is the answer some combination of these? Is there a simple answer? Or am I barking up several wrong trees at once?

Here is what I just tried:

Record the audio freestyle (8 measures of handclaps on the beat).

Use Beatmap from the Global menu and set/line up my points.

Turn on the click and ...

Record the midi drum parts and quantize based on my new beatmap tempo.

Viola, it worked great and I am now topping the billboard charts with my new hit song 'BEATmap IT'
