L9 - Getting tracks to show in environment window

Hi all - total noob - only got a mac and logic pro 9 on Monday so don't flame me too hard :)

 

Basically, I'm trying to work out how to run an arpeggiator into an ES2, every tutorial I do says that I need to run the arpeggiator into the ES2 track in the environment window, however my environment window is completely empty and has no tracks in (unlike all the tutorials I do).

 

Can someone explain a) how to put tracks into the environment, b) what the use of the environment over and above using an arpeggiator is and c) why routing is needed in this manner?

 

Thanks for any help - i understand this may be basic to some :)
