The chord symbol entry feature automatically makes lowercase b into ♭, and # into ♯, but I added text shortcuts to my Mac (which were adopted into my iPhone & iPad) that give me the ♭ (flat) option whenever I type “flt”, and ♯ (sharp) whenever I type “shp”.
